Famous Faces

I hope everyone had a great Easter weekend!  I'm sure you are all wondering where are the pictures from Easter????  Well I didn't take any myself.  We actually had a friend come and take photos at Jason's moms house for us while Logan (Jason's sister) was in town from college.  I should get the photos very soon so come back soon to check them out! 

I was trying to think about what I could blog about and was flipping through some old photos and thought... why not famous faces! I wish I still had all the photos of people I met in the past, like Alan Jackson, Train, and Joe Don Rooney from Rascal Flats. Those were before the digital days! 9 Months

Time is flying by!  It seems like just yesterday I was holding my sweet little baby in my arms and now he is crawling all over the place!  Jackson is such a joy to be around.  He is such a happy and sweet baby... we really got lucky with this one!  Last week Jackson turned 9 months and weighed in at 21 1/2 pounds (70%) and 30 1/2" (97%) for height.  I'm so glad he didn't have to have any shots.  Just a little poke in the foot to test iron levels.  I can't believe in a few short months we will be celebrating his 1st birthday! 

1st Haircut

I took Jackson for his first "official" haircut yesterday at Sports Clips.  I trimmed the hair around his ears before we took pictures in the bluebonnets and didn't do a very good job.  We are taking family pictures with his Jason's mom this weekend so I wanted Jackson to look his best!  He was so good and sat pretty still for the most part.  I'm sure he will be a wiggle worm next time since he is becoming more mobile!  Here are a few photos:

Herbs

Once a year I redo my herb pots that don't make it through the winter.  This year my rosemary is the only thing that survived the freeze.  Here is what I planted

Squash and Jalapeno Peppers

I still need to plant my cilantro and find some parsley to plant.  I will be sure and let you all know when my peppers and squash appear.



Outside

Jackson loves to be outside and mommy LOVES taking his picture!  First we stopped by our favorite photo spot... the fence!  Someone really needs his mohawk trimmed!

Then the next day we decided to take the walker outside to roam the streets.  Its hard for Jackson to move around in the house so I thought that he might enjoy the freedom of the road.

Clean Eating Lettuce Wraps

Another clean eating meal for you all to try, and this was is super easy and very yummy!  The husband loved it and requested I make it again so I decided to share it with you all.  My sister actually told me about this recipe that is in one of her clean eating books that I don't have.  So I stole my moms copy of the book that Jenn gave her to try it out!

Here is what you need-

1/2 red bell pepper diced

1 good size carrot grated

2 celery stalks finely chopped

1 bunch of scallions finely chopped

1 peeled roma tomato diced

hand full of fresh basil chopped

pinch of fresh thyme

In a wok- heat a tablespoon of olive oil and add lean ground turkey- Add celery and scallions and saute till meat is fully cooked

Add remaining ingredients and cook for another 6 minutes- add salt and pepper to taste

Remove from stove and add a table spoon of tamari and sesame oil

Serve in lettuce as pictured below

Or like I ate it!  Lettuce wraps are kinda messy so I just served the turkey over shredded lettuce.  I added just a splash of tamari as my dressing.  The hubby used an Asian salad dressing over his.

City Center Dog Party

When Jenn was in town we went to Cyclone's in City Center to have lunch and they had a huge dog party in the center.  We ate lunch and then walked around to check it all out

We had a great time at the dog party.  I wish Jackson was a little older to enjoy it as much as Taylor did!  Soon enough!!!
