7 Months

I can't believe that another month has gone by! Jackson has become a pro at sitting up AND he is getting really close to crawling. I think in the next few weeks he should start! He pushes up and tries to lift his belly off the ground. I try to help him by pushing his legs underneath him, but he just kicks them back out and falls on his tummy! He loves to laugh, play, and watch TV. His favorite show is Yo Gabba Gabba. He loves DJ Lance. Jason and I just laugh at him! When DJ Lace comes on the TV Jackson puts a HUGE smile on his face... every time! He is really starting to become familiar with people and objects. If he sees his bottle the fake whine begins!!! When Jason comes home from work Jackson gives him a big ol' smile. He loves Elvis, who at times can annoy me with his barking, but Jackson is so entertained by him. If he is being fussy and tired of his toys Elvis always comes to the rescue. Sometimes I wonder if he likes the dog better than me! Today we went outside to take some pictures. How handsome is my sweet boy! I think I need to trim the hair around his ears though! Enjoy!

Dinner and Dessert

So my sister always post all her yummy dishes on her BLOG so I thought maybe I should too!  Today I made turkey tomatillo chili, a recipe out of one of my old clean eating magazines.  I followed it for the most part but made a few changes.  First you soak 3 dried chipolte chilies in 1/2 cup of boiling water for 15 minutes.  While that sits brown 2 lbs of lean turkey with 1 cup of diced sweet onions

In a blender, mix the following until blended:

1 1/2 pounds of tomatillos (husk removed and skin rinsed)

The soaking Chipolte Peppers, Seeds Removed

Soaking liquid from peppers

4-6 cloves of garlic (depending on how much you LOVE garlic!)

Now time to mix it all in the crock pot

Add the Meat

Tomatillo mixture

1 Small bag of frozen corn

2 Cans of white kidney beans (low sodium, drained and rinsed)

1 can of diced tomatoes (I added this to the recipe)

15 minutes before serving add 1 cup of cilantro and 1/2 cup of water in the blender.  Add to crock pot

Serve with grated cheese and a small scoop of sour cream is desired.  I really don't think it needs it so to cut more calories then just leave it out!

Tomorrow I am going to a friends for a girls party so I decided to make cup cakes.  I have to make more in the tomorrow because Jason and I ate almost half of them!  (They are mini and delicious... don't judge me!)

You can find the recipe at Food Network.  I think these are AMAZING!!!!  I find they turn out best when there is no humidity.  They are meringue cupcakes so they do fall after the come out of the oven- photos below show that!  I suggest spraying the liners with PAM before you pour in the batter.

Wednesday I left for a short trip to Austin (despite my husbands request for me to stay home) which turned into a much longer trip than planned!  I was going to come home on Friday so that Jackson and I could spend the weekend with Jason but the weather had another plan for us!  Houston was iced over so the roads were not safe for us to drive on so we decided to stay and hang out with Jenn and Tay Tay!  We took the kids outside for a few minutes to take some pictures in the snow... someone was not very happy!  We have had a great weekend but I am ready to get back home to my husband in the morning.  We didn't take a ton of pictures but here are a few from the weekend!
